Take your favourite start to your morning and turn it into a decadent dessert. This super simple but delicious No-Bake Cheesecake is a real winner.
2 Cups Whipping Cream (Keep them cold until your need them).
750g of Cream Cheese
1 Cup Icing Sugar
1 tsp vanilla extract
1 tsp lemon juice
Zest of half a lemon
½ Cup of Melted Butter
1 Cup of Crumbled Ginger Snap Biscuits
½ Cup of Crumbled Nutrific Biscuits
1/3 Cup of Sugar
A pinch of salt
Coat a round cake tin with an even layer of butter to prevent sticking.
Combine the base ingredients until well incorporated
Push the mixture down into the cake tin and up the sides. Try to create an even layer.
Place in the fridge or freezer until your filling mixture is ready.
For your filling, beat your whipping cream until you have stiff peaks forming (be careful to no over mix your cream).
In a separate bowl, mix the cream cheese, icing sugar vanilla extract and lemon juice together until smooth.
Fold the cream into this mixture
Spoon the mixture over your base and let it set up in your fridge for a few hours before serving.
