Alpen Breakfast Muffin

Spice up your daily routine and indulge in a fresh ‘n’ fluffy Alpen Dark Chocolate Swiss Style Breakfast Muffin.


1 cup        Nutty wheat flour
1 cup        Cake flour
1/3 cup     Brown sugar
4 tsp         Baking powder
1/4 tsp      Mixed spice
1/4tsp       Cinnamon
1x             Egg
1 cup        Buttermilk
3 or 4        Bananas
1/4 cup     Sunflower oil
50g           Alpen Dark Chocolate Swiss Style Muesli


Topping (Optional)

50g          Butter
3/4 cup    Alpen Dark Chocolate Swiss Style Muesli
1/4 cup    Brown sugar



  1. Preheat the oven to 180˚C and grease a muffin pan
  2. Sift all flours in a bowl
  3. In a separate bowl, mix the sugar, baking powder, spices and Alpen Dark Chocolate Swiss Style Muesli
  4. Blend the eggs, buttermilk, mashed bananas and oil
  5. Combine both wet and dry ingredients – you want a lumpy mixture!
  6. Scoop the mixture into your tray and cover with a spoon of crunchy topping (Optional) and pop into the oven 20-30 mins
  7. Serve fresh out of the oven with the preserves of your choice
