My favourite breakfast ideas

Not only is breakfast the most important meal of the day, it’s my favourite too! From warm, cooked porridges to fresh and on-the-go overnight oats; I’m not ashamed to say I am a hopeless romantic when it comes to breakfast.

 

A lot of my clients not only find breakfast difficult to incorporate into their busy lifestyles, but they tend to find it boring too. Well, I’m here to show you that it doesn’t always have to be boring; it can be fun and super tasty!

 

Here are a few of my favourite things:

 

On-the-go overnight Alpen muesli pot

I find if I’m struggling to make time for breakfast or I know it’s going to be a busy week, I try and plan ahead and make meals the night before. Overnight oats have been my staple in times like this but they can get a tad boring, so I decided to change it up and add my favourite flavour of Alpen Muesli to change the consistency a little bit.

 

Ingredients:

1 cup cranberry Alpen Muesli
1 cup milk of choice

1 grated apple

¼ shredded almonds

1 tsp desiccated coconut

2 tbsp thick yogurt

OR

2 cups Alpen Muesli
1 cup apple or orange juice
½ cup plain yogurt
½ grated apple

 

Mix the above ingredients together and place in the fridge overnight. Then top with seasonal berries and honey with a dash of Alpen Muesli for that extra crunch.

 

Chocolate smoothie bowl

Because I like to eat with my eyes! Smoothie bowls have been all the trend, and I mean why wouldn’t they be? Have you had one lately?! #LifeChanging

 

Ingredients:

½ cup oats

½ cup milk of choice

½ frozen banana

1 tbsp nut butter of choice

1 tsp chai seeds

 

Top with the Alpen Swiss Muesli Dark Chocolate variant, fresh banana, two diced strawberries and any other seasonal fruits or goodies you have left in the kitchen. The best part about smoothie bowls is making them your own, so get creative!

 

Muesli porridge

Winter is here! And what better way to use your leftover muesli from your cold milk days? This is such a simple recipe and can even be done in the microwave for those who eat at work.

 

Ingredients:

½ cup Alpen Swiss Muesli
½ cup milk

Cook over a medium heat stirring regularly until boiling, then remove for the stove and let cool. If cooking in a microwave, just check every 30 seconds that you aren’t boiling your breakfast. Remember to give it a stir every now and then.
Top with seasonal fruit, chopped nuts and honey.

 

Muesli parfait

Such a simple yet fun way to get creative with your cereal, and you only need three ingredients!

 

Ingredients:

½ cup Alpen Swiss Muesli
½ cup plain yogurt

1 cup seasonal berries

 

Separate the ingredients into three bowls and use half of each ingredient to slowly build the perfect parfait!
